What Minions Eat For Breakfast? – Moist Banana Bread

So what do minions eat for breakfast? :P Answer is BANANA! 3 meals a day every day

Banana is something I now associate with these cute little yellow creatures called Minions, since the movie trailer of Despicable Me 2 in 2014.

This week I was asked to put up my recipe for banana bread :D MY VERY FIRST RECIPE request (please request it is highly encouraged!) :D – banana bread

I hadn’t thought of blogging this recipe until my friend asked me to, so that they could make it for their new work colleagues to make friends (so… guys apparently bringing food to work will help you make friends, jump on the band wagon and start baking :P )

I often make this banana bread on request from the little sister, and on occasion when I remember or they remind me for a high school friend who is loves banana bread.

This version of banana bread is my personal favourite. Because it has a warm flavour to it from the golden syrup and hint of cinnamon. Really good toasted with butter or great on it’s own for breakfast, afternoon tea and even midnight snack.

Good thing is it’s half healthy haha… it’s got fruit in it :P Here’s the recipe enjoy!

Ingredients

55g Butter (softened)
75g Brown Sugar
½ tsp Vanilla
1 Egg
2 Banana (medium size)
127g Plain Flour
½ tsp Baking Powder
½ tsp Baking Soda
½ tsp Cinnamon
45g Golden Syrup
Handful of walnuts (chopped)

Method

  1. Preheat oven to 180/170 fan forced degrees celsius
  2. Line a loaf tin with baking paper

  3. Weigh out all dry ingredients and sift
  4. Chop up and add walnuts into dry ingredients and combine, put to one side (this coats the walnuts with a thin layer of flour so that they stay crunchy and yummy)
  5. On a board or in a bowl mash up bananas

    Mash till smooth

  6. In a separate bowl mix (cream) butter and sugar till pale
  7. Add egg and mix well (it may look curdled at this point but NO FEAR! once you add four it’ll be okay :D )
  8. Add golden syrup, vanilla and banana, mix well
  9. Add dry ingredients and fold in till no flour lumps are seen, just combined. (Do not over mix otherwise your banana bread will become chewy and dense)
  10. Pour into lined loaf pan
  11. Bake for about 30-45mins (Check at the 30min mark with skewer, skewer should come out clean, if it does not add another 5-10mins and check again until the skewer comes out clean)
  12. Remove from oven when fully cooked and leave in pan for about 10mins
  13. Use a butter knife to score on the sides of the pan where baking paper was not used
  14. Lift out the loaf by lifting up with the baking paper sides
  15. Allow to cool completely before slicing into 1.5cm wide slices (If you don’t wait till it cools completely the slices of banana bread will become dry)
  16. Best enjoyed toasted and with butter :D
